When I found out in January of 2009 that I could no longer eat gluten, I figured my days of eating out, or eating anything that tasted good again, were over. It took me a few months and many hours of Googling and talking to others that had Celiac or a Gluten intolerance to realize that I was very wrong. Before I found out about my intolerance, there were several customers of ours that requested Gluten Free (GF) items, and so we had a special menu printed up that indicated what they could and could not eat. So for me, eating at BIN112 was less intimidating than at other places since I already knew what I was up against. I was excited to find out that all of our sauces are GF as well as the grits and rice. We even have a flourless chocolate lava cake. Chef Jason always makes sure that even a diner with food allergies can have the same BIN112 experience as anyone else. While it still takes me a lot of courage to interrogate the servers at local restaurants about the details of every item, I have found that there are many places that cater to GF customers.
